100% Cabernet Franc from the acclaimed Boushey Vineyard may be the best Cab Franc we've made yet. All of the traditional hallmarks of Cab Franc; medium plus body, slightly herbaceous, with blue fruit that shines, but still has the earthiness that Structure wines are known for. We noticed that drinking it immediately after opening the fruit was much more forward, but after a few hours, this wine transformed into something much more old-world in style...very Loire valley in characteristics.
Perfect with lamb, duck, salmon and charcuterie.
